Title: Rhubarb Crumble

Yield: 6 Servings

3cRhubarb, 1/2 inch pieces
1cCubed peeled apples
1/3cSugar
1/2tsGround cinnamon, opt'l
1/2cAll-purpose flour
1tsBaking powder
1/4tsSalt
4tbButter or margarine
2/3cPacked brown sugar
2/3cQuick-cooking oats
  Vanilla ice cream, opt'l

Combine rhubarb,apples, sugar and cinnamon; spoon into a greased baking dish. In a bowl, combine flour, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. Stir in brown sugar and oats. Sprinkle over the rhubarb mixture. Bake at 350 degrees for 40-50 minutes or until lightly browned. Serve warm or cold with a scoop of ice cream, if desired. Other good spices for either the fruit mixture or the oatmeal mixture are ginger, nutmeg, cloves and allspice. Another idea is a dash or two of Angostura bitters on the fruit.
